Stokkebye started selling caviar 25 few years ago. And as it is typical of the passionate patron, Jacob Stokkebye travelled to Russia and Iran, which, at the time, were the place to find the best caviar. Agreements were established, and soon, Stokkebye delivered caviar to the major caviar houses of the time.

Today, Stokkebye selects its own caviar. The quality-team is on-site when the sturgeon is selected to provide the very best caviar for our customers. The sturgeon is farmed in big, natural lakes in Schleswig-Holstein, which used to be part of Denmark, to ensure both the quality and the traceability of the caviar. The natural lakes provide the fish with plenty of space and time to grow from the natural sea plants in the lakes; as always, the Stokkebye way communes with nature.

By Stokkebye offers caviar, where only salt is added, and caviar with salt and borax, which ensures greater durability. The qualities are: Beluga, Imperial Royal, Osietra, Baerii – and in addition, Danish farmed trout roe.
